微纳米气泡的特性及其在果蔬中的应用

摘要:
气泡广泛存在于自然界中,其在生产实际应用中具有重要的作用。按照气泡直径不同可分为大气泡、微米气泡、微纳米气泡、纳米气泡。通过对微纳米气泡特性进行深入分析研究,针对微纳米气泡具有粒径小,在水中存在时间长等不同于普通气泡的特点,详细论述了微纳米气泡的特殊性质在果蔬食品方面的应用现状及发展前景,并对其在其他领域的应用进行了展望,以期为微纳米气泡在更多领域中的应用提供参考。

Abstract:
Bubbles are widely existed in nature with its irreplaceable roles in the practical application and a large number of experimental researches have been conducted. Depending on the different diameters of bubbles, bubbles were divided into large bubbles, micro-bubbles, micro-nano-bubbles, nano-bubbles. In this study, the properties of micro-nano-bubbles were introduced base on the characteristics of small volume and longer residence time in water. The application and development prospects of the micro-nano-bubbles in fruits and vegetables were discussed and their applications in other fields were also suggested.
